This casserole also works as a perfect left over for the week ahead. No loss of flavor or texture at all! Perfect for people on the go!
I tried this recipe with and without the icing on the top, and I have to say that it is delicious either way. So for those of you watching your sugar intake don’t be afraid to give this recipe a try!
Cinnamon Roll French Toast Casserole
- 2 Cinnamon roll cans from the store. I used Annies Organics for this recipe but any will do just fine. (place icing to the side)
- 6 eggs, whisked
- ½ C milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
Wait, what? That’s it? That’s all I need? Yep! I told you its super simple.
Pre-heat oven to 350.
Use a 9×13 pan or something similar. Butter it to prevent sticking.
Open cinnamon roll cans and spread apart the rolls. Cut each roll into 6 pieces, or even 8 if you want them smaller then add them evenly into a casserole pan.
Whisk eggs, milk, vanilla and cinnamon together.
Pour the egg mixture into the casserole pan and allow it to soak for 30 minutes.
Place in oven for 30 minutes or until that perfect golden color has been reached.
Once finished you can swirl the icing all over the top and it is ready to serve!
This goes great with coffee or juice and is a nice wholesome meal for the whole family to enjoy together!
