This wine-poached plum recipe is perfect for a light dessert or breakfast starter. It is also great on the side for a lunch salad. Make sure you use a nice wine for this recipe as the plums will only enhance the depth of flavor (they cannot improve a bad wine). You can use any type of plum, they should not be overly ripe or they will fall apart.
Ingredients:
- 2 cups red wine
- 3/4 sugar
- 1/8 tsp powdered ginger
- 3 slices Orange peel 4 “ long and ¼” wide
- 1 tsp vanilla
- 6-9 Plums
- 1 small container vanilla yogurt
- Orange zest for serving
- Mint for garnish
Instructions:
-
Simmer wine, adding sugar, ginger, and salt until sugar is dissolved in a 10" to 14" flat-bottomed pan (large enough to fit plums).
-
While the sugar is dissolving, cut the plums in half and discard the pit.
-
Once the sugar is dissolved, place the plums in the wine mixture. Simmer for 10 minutes, or until plums are tender. Turn if the mixture is not covering the plums.
-
Once the plums are tender, remove them from the wine bath, and turn up the heat, reducing the wine mixture to a syrupy consistency. Remove the sauce from the heat, and add vanilla.
-
Plate the plums on a small dish, pour some syrup on top and add a teaspoon of yogurt, and a mint sprig (if you have it). Grate orange zest over the entire plate.
