Transient Weatherly Clan Pecan Tassies – Are pecans a favorite everywhere or are they just a special delicacy in North Carolina? We love them and people know it. We just received this recipe from a friend saying, “You must make this.” It could have something to do with a pecan pie craving. We’re willing to try it. Ingredients:
- 1 8-ounce package cream cheese
- 1 cup margarine
- 2 cups flour
- 2 eggs, beaten
- 1 1/2 cups brown sugar, packed
- 2 teaspoons vanilla
- 2 tablespoons butter, melted
- 1 1/2 cups pecans, chopped
- Powdered sugar, optional
Instructions:

Dough:
Combine cream cheese and margarine mixing until well blended. -
Add flour; mix well. Chill for an hour.

Divide dough into quarters; divide each quarter into 12 balls. Press each ball onto bottom and sides of miniature muffin pans.

Filling:
Combine eggs, brown sugar, and vanilla. Add 2 tablespoons of melted butter. Stir in pecans. -
Spoon mixture into pastry shells, dividing evenly among all twelve.

Bake for 30 minutes at 325 degrees or until pastry is golden brown. Remove from oven and cool for 5 minutes. Remove from pans. Sprinkle with powdered sugar, if desired.
