Transient Weatherly Clan Pecan Tassies – Are pecans a favorite everywhere or are they just a special delicacy in North Carolina? We love them and people know it. We just received this recipe from a friend saying, “You must make this.” It could have something to do with a pecan pie craving. We’re willing to try it. But if you have time to make this must-try pecan tart recipe before we do, let us know what you think. Should we make it a regular Wildberry Lodge breakfast dessert or afternoon treat?

Servings: 4 dozen

Ingredients:

  • 1 8-ounce package cream cheese
  • 1 cup margarine
  • 2 cups flour
  • 2 eggs, beaten
  • 1 1/2 cups brown sugar, packed
  • 2 teaspoons vanilla
  • 2 tablespoons butter, melted
  • 1 1/2 cups pecans, chopped
  • Powdered sugar, optional

Instructions:

  1. Dough:
    Combine cream cheese and margarine mixing until well blended.

  2. Add flour; mix well. Chill for an hour.

  3. Divide dough into quarters; divide each quarter into 12 balls. Press each ball onto bottom and sides of miniature muffin pans.

  4. Filling:
    Combine eggs, brown sugar, and vanilla. Add 2 tablespoons of melted butter. Stir in pecans.

  5. Spoon mixture into pastry shells, dividing evenly among all twelve.

  6. Bake for 30 minutes at 325 degrees or until pastry is golden brown. Remove from oven and cool for 5 minutes. Remove from pans. Sprinkle with powdered sugar, if desired.
