There are people who love French Toast, and those who prefer pancakes. Everyone loves blueberries in both of them! If you are looking for a recipe that will make an easy morning, this Lemon Blueberry Baked French Toast is the perfect fit, especially if you are serving a crowd.

All of the preparation is completed the night before, so that the egg-filled custard can soak into the bread. In the morning, you just pop it into the oven for 45 minutes, and enjoy. No running to the grill to make more. And IF you have any leftover, you can heat it up the next day, but our experience is that there is rarely any of this recipe left over.

Servings: 8 - 10

Ingredients:

  • 6 C Brioche Bread, cut into 1" cubes
  • 1 lemon, zested
  • 8 eggs
  • 4 C milk
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 pint fresh blueberries

Instructions:

  1. Spray a 9x13-inch glass baking dish with cooking spray. Add bread cubes.

  2. Mix milk, eggs, lemon juice, salt, and vanilla with an immersion blender or whisk until all eggs are incorporated. Stir in lemon zest.

  3. Pour mixture over bread cubes. Spread washed fresh blueberries on top. Cover with plastic wrap, and refrigerate overnight.

  4. In the morning, remove from refrigerator, and remove plastic wrap. Preheat oven to 350 degrees. Bake for 45 minutes. Let cool for 10 minutes before cutting into serving pieces.

    Serve with butter, and syrup.
